Heading to the local nature center for a Maple Syrup section later this afternoon! I've collected close to 4 gallons of sap!

That's almost enough for a stack of pancakes!

What does that mean? To learn how to boil it down? I figured you already knew how. Wouldn't it be more prudent to learn the ropes before you start collecting sap?

FWIW: A diner I frequent is now serving maple surple with pancakes, etc. One of the waitresses and her hubby make it every year.

No. I've not tried to make syrup before. The sap I have learned does go bad and should be boiled down before it's 7 days old. Today makes 6 since the trees started producing, clogged spiles slowed me down a couple days.

It's all in fun really, by no means will I consider competing with Aunt Jemima.....

We hardly eat syrup anyway.....

Aside from volume, there is no comparison. Real maple surple vs. corn syrup with added sugar?

At any rate, when you get it boiled down can you text me a sample?

Yep, it is not served free here as the fake syrup is, understandably.

I'm pre-diabetic so have cut way down on all carbs, and sweet stuff as close to zero as I can get. I'm hoping to get my A1C back to normal in a few months.

A few years ago, one of the maple producers in Vermont bottled "maple water". It was pure maple sap straight from the tree.
