Depends on the cut. Filet, I'll take it charred rare or "Pittsburgh" style. For something on the other end of the fat scale, like a ribeye, I need the fat to render a bit so medium rare. Good Prime Rib? Walk it by the oven and say this could have happened to you, and then just cut me a slab.
