Utah quality pics, these have a signature instead of a stamp since they were commissioned. If ot has a Pumpkinvine forge stamp, it was sold at a show.
I'll set the bevels and hone, then ship, tomorrow afternoon.
Working on other orders for April, Then bust hump for the Blade Show.

I've heard them called all kinda things.....Siberian chefs knife, Tuna fillet,.

I hope you enjoyed crafting these, as much as I will using and owning them!

No doubt, they will be handed down to my daughter, the graduate Chef!

So the larger knife, I had seen similar while traveling through Spain and Portugal in the fish markets, being yielded like a third hand. Amazingly talented men, with years of experience filleting fish.

Man are they beautiful!

So, the large filleting knife is made from a leaf spring?
Are springs a special metal or treatments?

Do these knives need to be oiled or conditioned?
