Just made this as a half recipe, i.e. one can of each vs. 2. I pan seared some garlic and onions first, then dumped everything in. I also drained the black eyed peas because it seemed too watery already. Locally sourced Holmes Smokehouse sausage was also substituted.
My finicky mother said it was OK, but she didn't care for the black eyed peas. I liked it....couldn't be any easier, and there will be leftovers, which is a plus. |
