Was it on the menu somewhere? If not, it's a rip off. No way I would pay that willingly, and if they wouldn't take it off the bill, I would inform them that I would NEVER be a customer there again. Now if this was in CA, since I live in NJ, that wouldn't be much of a threat, but I'd probably be a little loud about it.

All they have to do is post it somewhere and they can charge it. You'll have to look for the sign but it'll be somewhere.

Back in the 80s the wife's uncle would put a 20 or a 50 depending on how many in the group under a glass telling the server girl that's her tip if everything goes well. If she wasn't attentive it went down, if food sucked he didn't hesitate to send it back. The one dinner he sent everyone's food back as half were cold and the other half wrong. The tip got cut in half right then as she shouldn't have brought it out that way.

Few years back large group went out... Our server's shift was over so he left and nobody took over. Food was sitting in the back for 20 minutes waiting to come out. We had to track down the boss and ask why nobody was waiting the table. We had reservations for the group a week out. Food sucked, they never filled an empty glass. They ran out of some food and just sent out whatever was left I guess. FIL left a tip, I would normally throw in for tip but not that night. I asked him how bad did service have to be to not leave a tip.. He said never.. Dumbass.

Back of house is everything from the line back; chef, cooks, prep, bussers, dishwashers.

I've never seen a separate charge for it. We always tipped back of the house from our tips from the front. If I'm placing an order to go, back does almost same work and front doesn't do shit. I just ask if I can tip the back when I'm paying.

The managers and owners have started doing this because they are scraping money from the staff. Bastards.
