Came across a recipe that has them being crusted in a hot cast iron pan and then pour water in and cover to steam.

Trying it now.

Try it on the grill. I crank mine up to 650F and let the cast iron sit in there for 15 minutes. Best reverse sear ever. I also use this method with sous vide steak. 2" Tomahawk Ribeye, sous vide to 125 with a couple sprigs of rosemary and a Tbsp of salted butter. Big fan of Sous Vide and do most steaks that way. Have been using side burner to sear…. I’ll try the 650f grill next time. Thanks

BTW- also use a Kamado Joe or BGE griddle on grille (Weber Genisis) for smash burgers and steak searing
