Just the thought of eating raw fish makes me want to projectile vomit.

Gas station sushi is usually not fresh. Most restaurants have thawed fish served as sushi. In Japan, I have never had thawed sushi that I knew of.
I loved the conveyor belt sushi joints over there..

Many species are frozen these days. That's the way they kill the creatures and bacteria. Shellfish, uni, etc. are not.

Here's a picture from the Tokyo fish market, where the finest Tuna in the world are sold...

For the love of God. FDA requires it to be froze with quick shot of nitrogen, if I remember correctly, In USA, then thawed to kill parasites etc.. We have different food health standards than Japan..
As far as Wasabi, yes our crap is generally horseradish dyed green.
You can eat raw fish, meats etc. You just have to know how and when.
Animal Kingdom does it every day.

Nothing sold at restaurants is fresh unless brought from the ocean to the restaurant in front of your eyes. Only once in my life I ate minutes-old sushi in Sasebo, Japan. We were at a sushi restaurant when a Jap guy carrying a yellow tail and fishing gear entered with a big fish and gave it to the chef. We told the chef we wanted that fish into sashimi and sushi.

Everything else is captured, frozen, packed with ice or covered in salt, stored, shipped, trucked, and delivered worldwide.

Your "fresh sushi" is older in Texas than in Oregon.

This is actually 100% true. Salmon, Flounder, and some sea bass, watch out. Tuna not an issue at all.

I used to catch the odd flounder in the SF bay. Full of parasitic worms, but preparation and cleaning and thorough cooking eliminated them. Very gross to deal with, though. The Vermillion cod and Stripped Bass and sharks I'd catch never seemed to have any parasites.
