And you can buy new ones, but the supplier says bolts/screws not included. So, don't chunk those in the bin.

4 looks like OEM rear leaf spring bolts.

Restoration can be fun even with everything bagged and tagged. Throw in no labels/no tags and parts from every year of Vette ever made.

I think the thick black thing is a gate latch.

2 is a cable holder, not sure where. My spidey sense says ebrake.
No manual choke so thats out, possibly hood latch related.

Some parts are in bags, but most of those are already on the car.

You can't count

#2 looks like something for a cable. Emergency brake? Under car, lever inside interior or something. It bolts down and pulls a cable of some sorts
