Great zucchini salad
I am not a zucchini fan but this is good. You can vary this I am sure. I thought about putting ginger in it. Or if you like alot of lemon, squeeze in some juice
I got this from a weightwatchers cookbook 1 1/4 pound of zucchini 1/2 teaspoon of salt 6 large basil leaves thinly sliced (I used freeze dried ) 2 teaspoons of olive oil 1/2 teaspoon maybe a little more lemon zest black pepper Slice zucchini thin. Use a vegetable peeler if possible place zucchinni in a colander and use 1/4 teaspoon of salt, toss and let drain for 15 minutes gently squeeze out water when through Mix all together I only post recipes I have used and like |
