Whole operation. They paid $1mil 10 years ago and sold it last year for $10mil

Nice job how’s the point vs flat? I can’t seem to get whole briskets right, one side of the other gets overcooked.

Point is done perfect but the flat is a bit tough. The fat rendered nicely but I still need practice. This is only the second brisket I have ever done.
