My wifes Shun and my Hattori. We have a pretty good collection of Henckel and Wustof as well.
As far as sharpening-how often do you send yours out to sharpen. My knife shaprening skilz suck. |

I don't have photos handy, but my main knife of choice is a Shun Ken Onion Santoku. I sent it out to be sharpened through Shun a few months ago. Just pay the shipping there and they sharpen and return it free of charge.

Wow. I'm still using the knives my Dad got "free with purchase" when he filled his gas tank with Shell gasoline in the late 1960's. They have never been sharpened, either.
