Lean Lasagna - Recipe and Pics
This is one of Mark's favorite meals that I make...and healthy too!
Start with a bag of spinach (chopped) and a container of Ricotta. I use fat free. Mix together...hands work best for mixing the cheese in. Chop LOTS of veggies! I started adding carrots a while back when I had some I needed to use up...ended up being super yummy and adding a sweet element to the dish. Saute garlic and onions Add a package of ground lean turkey...this was Jenny-O which are usually about a pound and a quarter. Brown meat Add veggies, tomato sauce and spices Boil 9 noodles Get your cheese ready Cook down meat and veggies Layer three noodles and spinach mixture Followed by meat mixture and 1/3 of the cheese Continue layering for three layers of each and into the oven Almost ready Let stand 5 minutes Dinner's served! When I first made this lasagna years ago this is the recipe I used. As you can see I changed a few things...like adding tons more veggies! Quote:

That looks great. Lots of veggies. And for those with blood sugar problems, substitute whole wheat lasagna noodles. I've switched totally to ww pasta, it matabilizes much slower than white flour pasta.
