Default Easy NE Clam Chowder with pics

Wife asked me to make my Clam Chowda for her-So here's how I do it.

Now the apple smoked bacon we get from the Amish market near Lancaster PA. Actually it's located between Blue Ball and Intercourse.

Cook bacon until crisp.


Turn on TV-make sure it's Clint Eastwood spaghetti western.



One cup celery, one cup white onion finely chopped. Throw in bacon grease.



Ingredients for next step.



When onions are translucent, pour in clam juice. NOT THE CLAMS.



Put in 3 large taters-cut into smallish bites.



Put on the lid and cook until potatoes are done.(About 40 minutes)

The next step moves quickly. Transfer one cup of potatoes from pot to blender/add one quart of half and half. (Never said this was low calorie. lol). Use low speed and mix.



Pour slowly into pot and stir.



I use potato flakes as a thickening agent. Adds extra flavor as well.



DO NOT LET IT BOIL AFTER ADDING HALF AND HALF. Turn the heat off at this point.

Add clams.



Add crumbled bacon.



Salt and pepper to taste.

Finish product.




Serve with a sliced baguette and a gin and tonic. Cheers !

I did this with you in mind. It is pretty awesome-it's the ultimate diet killer.

I do all of the cooking around here. We had a curried shrimp tonight that was pretty good. I also have some venison in the freezer that needs to be made into chili soon.
