Full day ordeal @250f


Spice night before, cross check fat cap, slather w mustard and brown sugar

Get grill stable at 250-275f

Fat side down, till internal temp @165f, warp in butcher paper (preferred))
or foil [@4-5 hrs now], back on till meat shows ~200f

Wrap in towel, place in igloo cooler for a few hours, remove, unwrap, remove bone (will fall out), shred w hands and go for it
