These concrete patios have held up to 80 years of salty air. They are the only way to go.

2x8's make a much better deck joist.
And the big issue you want to address is the girder.
A better way to go if you have the elevation is a beam instead of a girder and set joists on top of the beam instead of hanging off the girder.

Curved room and crown moulding? Wood or PVC moulding.. I'm sure with a little heat, PVC moulding could work but I'm not sure how you would bend wood moulding in a curved room.

As Bob posted some use steam. A lot depends on the wood species.

I used the soaking method. I Built long troughs and lined them with plastic and filled with water and soaked them for a few days. Turns the moulding into a long wet noodle.
Then the process of nailing and screwing and gluing. And bracing, lots of blocking and shimming.

I’ve done this several times over the years. It’s really only practical for painted trim.
Stained trim and especially hardwood like oak would require the moulding to be milled and tooled on the radius. I have done this as well.

For soaking I never thought of building a trough. I just stuck them in capped pvc pipes.

Add:

Another process that is old school is plaster crown or cove. A substrate is installed and the entire trim work is done with plaster and shaped skimming knives.
Curved walls are a piece of cake with this method.

An old and dying trade that only very wealthy with huge budgets can afford.
Nowadays foam substrates are used and the moulding shape is already there so you are only skimming the plaster.
Back when we did it all the moulding profiles were done with the tools. My dad was really good at this.

We did exterior work too. High cornice work and brackets and corbels on building facades using waterproof plaster and the same tools.

I spent many many hours on ladders and scaffolding. It’s why my body is so fubar.

Actually I had considered splitting large diameter pipe to make the troughs. But plastic lined wood frame troughs is much less expensive and super simplistic. We also could put several pieces of moulding in each trough.
