Dixie's SMAC

Smoked Macaroni and Cheese



SMAC
2 cups uncooked elbow macaroni
2 tablespoons butter
2 cups whole milk or half & half
1/2 teaspoon salt
1 teaspoon of ground mustard
1 teaspoon hot sauce (Tobasco or Red's)
1 lb. American Cheese
1 lb. of Velveeta Cheese
8 oz. Cream Cheese
8 oz. smoked Gouda Cheese
1 can (10 3/4 oz) condensed Cheddar Cheese soup
1 cup Sour Cream
1/2 cup Mozzarella Cheese
1 cup yellow Cheddar Cheese
1/2 - 3/4 sleeve of Ritz Crackers
6 - 8 slices of cooked and crumbled bacon

Optional - add 5 or 6 well diced jalapeno peppers

Boil macaroni for 10 minutes in salted water. Meanwhile, melt butter in a large saucepan then add milk. Slowly add the rest of the ingredients with the exception of the Ritz Crackers, Mozzarella Cheese, and Cheddar Cheese. Cook on very low heat, constantly stirring the mixture, until everything is smooth. If desired, add the jalapenos at this point.

Remove the macaroni and drain. Transfer the macaroni to a well greased 9" x 13" dish and stir in the cheese sauce. Sprinkle the bacon bits on the mixture and stir to incorporate them. Sprinkle half of the Cheddar Cheese on top of the mixture, then crush the Ritz Crackers and spread the crumbs over the fixture. Finally, spread the remaining Cheddar Cheese and Mozzarella over the top.

Smoke at 250* for approximately 2 hours or until golden brown and bubbly. To prevent this dish from becoming too brown and crusty, cover with foil if needed.
