Default You NEED this butter for your steaks!! (And everything else)

Gorgonzola butter

Ingredients:
  • 2 heads of fresh garlic
  • 2 tablespoons olive oil (or as much as required for roasting the garlic)
  • 1/2 cup (1 stick) salted butter, room temperature
  • 1/3 cup crumbled Gorgonzola cheese (about 2 ounces)
  • 2 tablespoons chopped fresh parsley
  • Cracked pepper to taste (optional)

Preparation:

***Best when made one day ahead of time, so flavors can infuse***
  1. Preheat oven to 350°F.
  2. Cut off top 3/4 inch of garlic head to expose cloves
  3. Peel away the papery white outer layer that covers the bulb of garlic
  4. Place garlic on piece of foil; drizzle with olive oil.
  5. Enclose garlic in foil.
  6. Bake until garlic is very soft, about 1 hour.
  7. Let garlic cool.
  8. Squeeze garlic cloves out from papery skins into medium bowl and mash garlic with fork.
  9. Mix in butter, cheese, and parsley.
  10. Mix in cracked pepper (optional)
  11. Transfer Gorgonzola butter to sheet of plastic wrap.
  12. Using plastic wrap as aid, form butter into 1 1/4-inch-diameter log, wrapping plastic tightly around butter.
  13. Chill until firm.
  14. Cut off pats of butter as needed.


The roasted garlic in this recipe is worth the extra step of roasting it yourself. Plus, if you roast extra, it can be used for a ton of other recipes, including just as a straight-up spread all by itself.

I highly recommend this. I roasted garlic for the first time last night. It's very easy to do, it tastes great, and it makes the whole house smell absolutely delicious.

I always roast extra because it can be used on and in so many recipes. Or just spread - as is - on some nice bread.

I have a great roasted garlic aioli recipe somewhere around here that is great on sandwiches and burgers. I'll have to dig that up.

Any of those exotic 'burre de maison' butters also freeze quite well. Just take it out a while before you slice it. Keeps for months.
