My mother used to do that when I was a kid. Same for manicotti. My parents couldn't afford any of that highfalutin baller ricotta, mozzarella, parmesan, etc.

poor families make lots of substitutions. cottage cheese mixed with a small amount of mozzarella makes a lot of lasagna on the cheap. we easily had a large pan for two nights dinners. probably 40 cents a serving or less when I was a kid.
steak wasn't steak in our house, it was liver. never had real steak until my late teens and that was one night my parents had a coupon for rustler. it still cost five or six bucks, I don't recall. large pot of mush--ground beef, canned tomatoes and macaroni elbows. that lasted two to three days. being poor simply means doing the best you can with the allocated resources. |
