My mother used to do that when I was a kid. Same for manicotti. My parents couldn't afford any of that highfalutin baller ricotta, mozzarella, parmesan, etc.

poor families make lots of substitutions. cottage cheese mixed with a small amount of mozzarella makes a lot of lasagna on the cheap. we easily had a large pan for two nights dinners. probably 40 cents a serving or less when I was a kid.

steak wasn't steak in our house, it was liver. never had real steak until my late teens and that was one night my parents had a coupon for rustler. it still cost five or six bucks, I don't recall.

large pot of mush--ground beef, canned tomatoes and macaroni elbows. that lasted two to three days.

being poor simply means doing the best you can with the allocated resources.

All of the above, but no liver. A slice of meatloaf was a steak. Lots of three day meals growing up.

I mix 2 parts ricotta with one part mascarpone.
It's my 20lb lasagna made in a turkey roaster.
