Default Biscuits And Gravy [trying to lose weight]

I made a couple of adjustments to the traditional recipe. I substituted some sauteed (well-caramelized) brown mushrooms instead of sausage. I also used skim milk instead of regular, 2% or 1%.

Turned out pretty good!

RECIPE
---------------------

Biscuits:

- Do you really want me to tell you how to make biscuits
- Make them the way you always do
- Or mix 1 cup of Bisquik and 1/3 cup of skim milk, stir, knead 10 times, roll to 1/2" and cut out little circles of the dough. Cook at 450 degrees 8-10 minutes or until golden brown. Take them out of the oven to cool, unless you like your biscuits (Bisquiks?) to resemble large, uncomfortably crunchy croutons (don't ask me how I know this).


Gravy:

In one skillet, saute roughly-chopped mushrooms over medium high heat. Shake the skillet often to get them evenly cooked to a dark brown color. The darker they get, the more caramelized they get. Just don't burn them.

Pour 1/4 cup of vegetable oil in another skillet and heat it up over medium heat a few minutes.

Slowly whisk in a little more than 1/4 cup of all purpose flour. Keep whisking it as it turns brown (should be less than 5 minutes or so)..

Stir in two cups of skim milk slowly, to avoid lumps. If you do get lumps, have them checked by a doctor.

Add 1/2 tsp salt and 1/4 tsp pepper (or to taste)

Add the caramelized mushrooms (scrape the pan to get more of the caramelized goodness).

Stir the gravy until it gets nice and thick. If you can serve it over your biscuits with the whisk instead of a spoon, it's probably thick enough. Add a little milk if you need to thin it out.




Disclaimer: I doubt seriously you'll lose any weight by eating biscuits and gravy, even if you did substitute skim milk and sauteed mushrooms. But you'll feel better about yourself.
