Default Smoked Mac N cheese

Trying this for the first time today. Going to friends later for ribs, chicken, and sausages.

This batch will be a combo of cheeses and crumbled bacon.

Anyone else tried smoke mac n cheese? Suggestions for next time?

Dixie inspired all of us with his menu. Today we're smoking ribs, corn, broccoli, zuchini, jalapeno mac. Currently in progress - will post results later...

I neglected to pose the completed pics. Here you go...



Here's the jalapeño smac recipe I came up with as a starting point. I'll make some adjustments the next time.

Ingredients
2 cups each sharp cheddar and gouda
1 cup parmesan cheese
8 oz cream cheese cut into chunks
16 oz elbow macaroni
1 onion chopped
bacon - how much is up to you. I used ~ 8 oz
2-3 tablespoons chopped jalapeño (to taste)
~ 3cups milk
1/4 cup each butter and flour

Steps
caramelize the onions and set aside
prepare the BACON crisp and set aside
prepare the macaroni al dente
make a roux with the flour and butter (light brown)
slowly stir in milk while whisking
cook for 5 minutes while stirring occasionally
add cream cheese and stir until smooth
salt / pepper to taste

in a large bowl, mix the cheese while reserving some of each for the topping.
mix in the onion and jalapeño
mix in the hot cheese mixture
add the BACON!!!!!
Spoon into 11x9 pan
top with remaining cheese
to the Smoker until browned and bubbly. (60-90 minutes at 225 in the smoker)


There you go. Now what will I do differently next time? I 'd like the smac to be more creamy. The half and half will help and I might add 4 oz of Velveeta to add creaminess and color. I think a larger macaroni than elbow would be better also.

looks like the exact recipe i used last weekend less the bacon, onions and jalepenos. i'm with you, need it much more creamy/soupy.
