I wonder how much of that is due to

~new chicks getting to laying age
~stopping the mass murder of current flocks
~importation of eggs from other countries
~demand elasticity of substitution

I know I bought fewer eggs, so my demand personally is down. I'm just one person, but if tens or hundreds of millions of other US consumers also changed their buying habits, that would certainly have an effect.
