Default Crock Pot Ribs... Dry

I tried these. They cook 7 hours in a crock pot without any sauce, water, nuthing. Throw em in dry with only a rub. Stand them up, set on low, 7 hours later take them out and hit the oven broiler on them for 4 minutes with bbq sauce.

My family loved them. The meat literally fell off the bone. That's what I don't like. I want to chew the meat off the bone and not have it be like stew meat.

It was easy peasy and there's a ton of YouTube recipes.

Personally, I'd rather have the McRib. Flavor was great, I just don't like that 'stew meat' texture on a rib.

buried in snow here but I agree. I've been working at making a good St. Louis style rib in the house for so long and I just can't master it.

Best I produced was an oven recipe that was close but not quite there.

too much moisture being closed in.

I'm going to try a Crock Pot recipe next weekend that cooks them in Coke-a-Cola. Has 1000 reviews and 5 stars.

But in the end, I've got to continue experimenting with them in the oven. I've got to get the time down...

How long with foil over leaving the moisture in... how long with foil off letting the moisture out.

I'm close! But just need to keep grinding it out.

Try rubbing them down and leaving uncovered in the chill chest for 24 or so. That will pull quite a bit of moisture out of the meat. And get some real BBQ sauce please. That simple sugar syrup you are using adds nothing to the flavor. Perhaps some Stubbs Original if sauce in a bottle is ok.

Then cut the time back 1/2 hour at a try until you get to textural nirvana. Crock pot ribs can be quite good if the details are sorted.
