You overcooked them if they fall of the bone. Plus too much moisture in a crock pot for what you want.
You can try less time and maybe cracking the cover open slightly.

BTW I've never ate anything out of a crock pot/slow cooker that didn't end up haveing the texture of a stewed meat.

I use the crock pot for pot roast and other cheap meats. That’s about it.

The only way to make something tasty in a crock pot, like say beef short ribs, is to brown the crap out of them before slow cooking. At that point you've already got your dutch oven dirty so you may as well just braise them off at that point over a low burner or in the oven. But you can sear and then put into a crock pot, or even get a crock pot with a metal insert that you can sear in (I happen to have one, it's OK but not great for that.) I should say that my wife has one, I'd never use it but have one if you know what I mean.

I made braised beef short ribs yesterday and they were great. Seasoned very well with salt and pepper. Seared them really hard in a heavy enamel-coated dutch oven, drained all the excess fat, then cooked off half a can of tomato paste before adding the braising liquid. It was several kinds of dried chilies (re-hydrated in hot water) guadillo, ancho, chipotle, and de arbols. Roasted sliced onion and about 8 roasted garlic cloves, pureed that up in the old Vitamix with about six cups of water, and cooked over low heat on the cook top for 4 hours+. Then I tossed in some acorn squash at the end, plated with full fat plain Greek yogurt, cilantro, and lime wedges. Some nice mashed potatoes and green salad to finish it off. Fed five of us with 8 short ribs with a little leftover.

I know that if you were in a competition, you don't want the meat to fall off the bone, but honestly, when I cook ribs, that is how I like them. They look great!

Where’s the fun of a BBQ if ya can’t drink beer, tell the wife to get away...

smoke dem ribs, wrap in Butcher Paper paper I do....

typically 3-2-1 method for St Louis ribs or 2-2-1 for Baby Back ribs....

grille by choice Kamado Joe or Egg type, 250f degrees....

All dry. Use the Rendezvous dry rub and just sit back and watch time pass...

Of course no snow here like Montkucky area
