zucchini chicken or beef italiano….was pretty good, shredded zucc, rice, Tomato sauce,chicken, onion, garlic, spices,egg,cheese

a few mods I made shredded zucc, didn't cook it, no ricotta, parmesan sprinkled on top of the meat mix mozzarella vs cheddar 3 qt deep pan

I can tell you a trick with zucchini, if you shred it like that add some salt to it and allow it to sit in a colander for about 30 minutes to an hour so the excess moisture will come out of it. Maybe a tsp of salt per zucchini is all you need. Will cook up much better in a dish such as this. You can even squeeze it after it sits with some paper towels to really get it sorta dry.
