I got some good news today!

Back in 2015, I bought a batch of "finished juice" of a very expensive Cabernet Sauvignon grape juice, I think it was $180 for 5 gallons plus tax and shipping. I went to ferment it myself (I make wine from time to time), and had to add 4 bottles of "finished wine" to the carboy to fill the headspace, so we are talking about $250 in total initial investment (read, the most expensive batch I have ever tried to make).

I don't know WTF happened, but this shit would NOT ferment. For the last FIVE YEARS me, my knowledgeable friends, AND my daughter who works for Gallo wines, have been trying to get this shit to finish, trying everything we knew, recommendations we could find online, and I was damn near ready to hire a Shaman to cast a spell, up until today, with no luck. Last year, we got all the brains together, and moved the carboy to a warmer spot, added some yeast nutrient, and fresh yeast, and put it up yet again. Today was the day that we were going to go to another level (trying a "yeast starter"), but when I pulled the carboy out, I noticed a thin layer of bubbles at the top. We tested gravity, and it was 0.99! It finished! Yay!

I also had an expensive kit that did that. I think I let it sit too long before I tried to ferment it. When I finally got around to it, it would not.

Sorry to hear that. What I have learned about home made wine is that a lot of patience is required. The directions say to leave it in the carboy for 3 months or so, and when I did that, the wines always came out very sweet, sometimes almost disgustingly so.

What I do now is take a gravity at the beginning, which is usually around 1.05, and I don't bottle it until it gets to 1.00 or less. This usually takes at least a year. This batch is the first one I have had that was this stubborn, but from reading suggestions online, I am far from alone.
