Catsup Chicken
This is going to sound like a horrible dish, but it's really good.
Catsup Chicken 1 1/2 pounds chicken, preferably dark, in 1/2 inch to 1 inch chunks About 1/2 cup flour 4 tbsps. oil, like corn or canola Salt and pepper 2 tbsps. slivered garlic 1/4 tsp. cayenne or to taste 1 cup catsup 1. Toss chicken in flour so that it is lightly dusted. Put 2 tbsps. oil in a large non-stick skillet and heat to medium high/high. Add chicken and salt and pepper. 2. Cook chicken on one side until it's brown, and turn. Smaller pieces will take 5 minutes to get done, larger pieces 10 minutes. Remove chicken to a plate. Turn off burner and let it cool for a moment. 3. Turn burner on to medium high. Add 2 tbsps. oil, garlic and cayenne, stirring while they cook (about 2 minutes). Add catsup and stir, cook until the catsup bubbles and darkens slightly. Return chicken to pan to coat with the sauce. [The chicken will absorb the sauce magically.] Taste and adjust the seasoning, then serve. |

This looks interesting, but not for me due to the amount of sugar in Ketchup. But it got me wondering about the different spelling of this condiment? Was it a USA/Canada thing? Well, if you don't mind wasting some reading time, and having a laugh at the story, read this tidbit about catsup vs ketchup! The Heinz vs Hunts case.....
