The forgotten ingredient...
This is what's for dinner tonight:
Grilled talapia, snap beans and new potatoes, and French bread. The French bread was toasted on the grill. The fish can be any kind you like and cooked any way you like it. But look closely at the beans and new potatoes: They are steamed (can be boiled, but use little water) with chopped onions and...pimentos. Pimentos add a surprising taste to this dish...and to other dishes as well, such as greens like turnips, kale, and mustard greens, even kernel corn, creamed corn, and potato salad. |

It is both! If you like your beans "crispy tender", that maybe doesn't comport well witt snap beans and new potatoes cooked in the old way. Traditionally, they are cooked until they're pretty soft. But...I see no reason that the potatoes couldn't be cooked longer than the beans, then the beans, onions, and pimentos added to give the best of both worlds. The pimentos hold up well either way they're cooked, crispy or tender.
