Default Christmas gifts for employees

I only have 2 employees. I was going to give them each a $50 gift card for Christmas. Anything else I should consider? besides more money

One is salary. The other is hourly. The salaried one is on vacation through the holidays. Can't give the other one off without pay since she's hourly. The company wouldn't go for that one. These gifts will be coming out of my pocket

I gave my on site staff bottles of wine. The off site team member for a $50 gift card. I have a front row assigned spot right outside my office as I will let them use it when I am out for the holiday too.

So it's not your employee as originally stated? So that makes you nothing more than her co-worker and it sounds like you're in a position to give her time off by doing her job. She might like that more than money? Hard to say, you could ask her which she'd prefer.

If she were salary, I could give her days off without issue. A single mother with 3 kids is not going to enjoy days off without pay. That's why the only way that would be a gift would be if she was off with pay. That is something I can't do.

I have both hourly and salary employees that report to me. Just different departmental structures. None of them are my coworkers (as in, at the same management level).

Are they really your employees? They sound like co-workers to me. If they are truly co-workers (you don't own the business), I'd just take them out to a nice lunch and pay.
