Made all kinds of cornbread over the years, but I'm craving something real special. Anyone have a new trendy/tasty one for me? Thanks.

I fancy up the Jiffy box stuff. I add chopped (jarred) jalapenos, creamed corn, and jack cheese.

This is the recipe I first saw but switched it up a bit with the creamed corn and the jalapenos...

Combine 1 (8.5 oz) box corn muffin mix, ½ cup shredded Monterey Jack cheese with jalapenos, ½ cup corn kernels, 1/3 cup 1% milk, and 1 egg. Divide between 8 muffin cups with cooking spray. Bake at 400 for 16 min.

I like Corn Kits...I don't pay much attention to the instructions. I add one egg per package & milk instead of water. it calls for 2/3 cup, but I make the mixture similar to the consistency of cake batter, except a little thinner. be sure & grease the pan. YUM YUM!

Whatz going on?....is that all ya got?
Well, this morning I experimented with normal skillet corn bread and it came out great......
Chopped cooked bacon
corn meal
plain yogurt
grated jack cheese
2tbs oil
i egg
pinch of salt, and sugar, tsp baking powder'

Added just enough milk for a thick cake batter thickness, poured into a no-stick buttered skillet on med heat, covered......about 10 minutes, flip it, covered for another 10, and it was great.

Don't use a mix, start with corn meal. I like to use shortening instead of oil. Follow the package instructions on the corn meal, using shortening instead of oil (same amount), and substitute 1/2 of the milk with Mexican crema. Add a can of chopped green chilies, and 1/2 can chipotle peppers in adobo, chopped. Oh, and a cup or so of grated jack or cheddar cheese. Make sure your baking powder is fresh and use 50% more than they call for. Bake according to the package directions and test with a toothpick (clean when inserted = done). This is my "basic" recipe for corn bread and it's not too spicy at all really. Use less chipotles if you are worried, I've used an entire can before and it got gobbled right on down. Great with butter and honey, and I cut leftovers in half and toast them, then butter and honey and an over-easy egg or two for breakfast.

Found this recipe a couple of weeks ago.
Sounds interesting, especially if you like ginger bread!
Haven't made them yet, maybe this weekend.

It's literally impossible NOT to make a cornbread as addictive as crack if you use the right amount of butter.

I like corn chunks in mine too.
