Default Mustard roasted fish

If you like the subtle flavor of fish you may not like this. I am not crazy about fish but this was real good.

I had some frozen tilapia and used it.

By the way, I washed it with salt as lspenser suggested. I think it made a big difference even with frozen fish. It may have been my imagination.

8 ounces of fish
kosher salt and ground pepper
8 ounces of creme fraiche (I used non fat sour cream cause I can't find creme fraiche at a piggly wiggly in Alabama)

3 tbl spoons dijon mustard
1 tablespoon of whole grain mustard
t tbl spoon of minced shallots
2 teaspoons or more of capers

preheat oven to 425

place fish (if it has skin, skin side down) in baking pan, salt and pepper

Mix all other ingred in bowl, add sea salt and pepper to taste.

spoon over fish

bake 10 to 15 minutes.
