Chimichurri pork loin, sauteed spinach, and whipped sweet potatoes
Well, Kroger had pork loin on sale for $.99 / lb, so I picked up a 4.5 lber for $4.46 There was also a deal on cilantro, 3 bunches for $.98 NICE. Therefore, I proceeded to make the following meal.
Chimichurri marinated pork loin Chimichurri sauce 3 bunches of cilantro (or parsley) 1/4 cup red wine vinegar 1/2 cup olive oil 3 cloves garlic crushed 1 jalapeno 1 Tbls salt Wash and trim off bottom stems of cilantro and roughly chop. In a blender (that thing you use to make margaritas), add all ingredients and process until slightly chunky (mine came out smooth, but it tastes the same). We'll use about half to marinate the pork loin and retain half for dipping. Pour into a bowl, cover, and place in the refrigerator (that thing with all the beer in it). Pork Loin Wash and dry loin, trim off fat if desired. Place in a a 9x13 baking dish and coat completely with the marinade (only half of the sauce) and season with salt. Cover dish with plastic wrap and place in fridge to marinate for 30 minutes. After 30 minutes remove from refrigerator and allow to sit for 10 minutes to return more to room temperature. Preheat oven to 350. After 10 minutes, place dish in center rack of oven and lightly cover with foil. Cook for about 25-30 minutes per lb based on your desired level of done-ness. I cooked this one for 2:15. Whipped Sweet Potatoes 1 lb sweet potatoes, washed 1/2 cup whole milk 2 Tbls softened butter 1/4 cup brown sugar 1 tsp salt 1 tsp pepper Poke holes all over sweet potatoes (not your hand) with a fork. Place on a microwave safe dish and wrap with a wet paper towel. Microwave for 6-7 minutes, or until a knife will easily pierce through the potato. Allow to sit for 5 minutes so you don't scorch your hands (although you still might). Cut each potato into quarters, and spoon out the potatoes into a mixing bowl. Add remaining ingredients and mash. Once mashed, grab your immersion blender (which you have by now because you're an adult) and blend/whip (whip it good) until smooth. Sautéed Spinach 1 large package of baby spinach washed and dried 1/4 cup olive oil 2-3 cloves crushed garlic Add oil and garlic to large skillet over medium heat. Bring oil up to temp allowing garlic time to infuse the oil. Add spinach (as much as you can fit) and cover with lid. Cook until spinach is wilted, or to your desired level of wilted-ness. Enjoy! |
