I was gonna do them in chicken broth and all that jazz but my second wife, an af am lady from East St. Louis and her momma from Mississippi said to braise them in bacon grease. So I did. Also used ham drippings that I saved for no particular reason. Hadn’t made em like this before. They good. And they gone.

Growing up, my grandma made bacon and threw mustard greens in the grease with salt and green onions. Yummm.

Other grandma made awesome polenta and scrapple. I liked scrapple till I found out what it was. Yuck!

Do you mean scrapple? I love that chit. Don’t care what’s in it (although I know) or how it’s made. Great with eggs sunny side up and grits.

Yes, I fixed, didn’t mean the word board game. Lol.

I always put maple syrup on mine. Was perfect sweet/savory mix.

Yep.

Great uncle had a dairy and mushroom farm. The Amish came to trade for his milk/shrooms. Interesting community.

It is. Not sure I have anything to do tomorrow either, somebody has to train me.

Actually, I don't know COBOL. Phred just says I do, because when I took this job a couple of years ago, it was to maintain a million lines "C++" written back in the '90s by electrical engineers who had no idea what software engineering was.
I'm currently rewriting the application from scratch in modern C++. It'll probably be less than 300k lines when finished.
