Lazy Chili
I think it's hard to screw up chili, but if you want to do some good easy chili
1lb ground beef. 2 cans chili beans 1 jar of fav salsa 1 can of a flavored diced tomatoes (they make so many I mix it up). Or even like a rotel. (or another jar of salsa) Some tomato juice, I like V8. 1 onion 1 can of mushrooms, or some fresh chili powder to taste cayenne to heat taste what ever else you seem to like. Easy. Dump cans of everything in a pot and start to simmer. Chop and cook onions and shrooms down in some butter to desired tenderness. Should season with some salt and chili powder. Cook ground beef. Season with salt, pepper, and chili powder. You can add the cayenne at any step depending how you like the heat. Dump all in the pot. Simmer. Add the V8/juice till desired consistency. Some like it more soupy, some thicker. You'll likely not need much. Add chili powder in increments till ya get a nice chili flavor. Add more cayenne or any heat source to the pot and keep simmering for awhile, the more the merry. I like some cheese and crackers on top, good to go. Welcome Fall I vary all steps. Never made the same chili twice |

I have always made my chili with top round steak cut into 1/2 " squares,with two types of kidney beans light & dark,one can of corn,mushrooms and a can of beer ,two cans of sauce and a little garlic salt.

I prefer the "string beef" taste and texture over burger as well. It falls apart after a long simmer. Seems more authentic as well. I doubt the ancient Mexicans had meat grinders!
