I bought a book you recommended, I believe, for cooking Mexican food. The Border Cookbook. My daughter has made some amazing dishes with it. Thnx.
And she also uses a Kent Rollins, youtube channel is great, book I bought her.
She is a Pastry Chef, and the notes and books she uses amaze me.
I am your average joe cook meat, potatoes etc..
My girlfriend, she cooks so damn good.. I will never be skinny again. She learned Italian cooking, in NY from her Mom and Grandma. Incredible food.
I respect anyone who is a beast in a kitchen or any outdoor grill etc.

I can make an awesome bacon egg & cheese sandwich for breakfast, a killer turkey and swiss sandwich for lunch, and a cheeseburger with horseradish mayonnaise for dinner, so I'm kind of a big deal chef myself.

I don’t cook. Don’t enjoy it. Don’t shop either, groceries or anything else. Hate it. Even going to buy a pair of shoes sucks IMO.
I can grill burgers or a steak occasionally. Even that is meh, to me.

Ok, my Clams Casino from years ago, I still make them the same way.

Freeze the clams for 20 minutes or so, so they will open easier. Reserve the juice: (Duh!)

Put some of the shells on a muffin pan or whatever you have and add the meat. Use enough shells so there's still room left after you add the clams:

Season with ground pepper, a bit of garlic powder, some onion powder if you like (do not over-season) parsley and/or oregano, and melted butter:

Bake in preheated 400° degree oven for 20 minutes or so, until the bacon starts to crisp up:

You can add some of the reserved clam juice if you like when they're done, although what I do while the clams are cooking is put the juice into a mug, add some water and any leftover melted butter, a dash of garlic powder, ground pepper, nuke it til steaming, and drink it while waiting for the clams. YMMV

The only written recipe I use is for my Fraternal Grandmother's Christmas pie. My father taught me to cook, my Maternal grandparents (bakery owners) taught me to bake. I decide what would be good every day since I get home earlier than the missus, peruse the pantry, perhaps read a suggestion online and just do it. We have had some spectacularly great meals in the past 33 years, and some barely edible concoctions.
These days the winners outnumber the clinkers by a long shot.

When I was in the Coast Guard they'd rotate cooking duty randomly whenever the cook was gone (often). After I cooked my first meal for everyone they asked me to be the permanent replacement when he was gone. Wasn't into it because whoever cooked also had to also wash dishes and I hated that, told them so. They got lots of people volunteering to wash dishes for me. Unprecedented

Wasn't long before the cook hated my guts because nobody liked his food. That P.O.S. excuse for a human caused me a lot of trouble lying to the Chief. If I met him today he wouldn't live to see tomorrow.
