An experiment gone right. My Italian-ish taquitos.
1 large red bell pepper
1/2 large yellow onion 4 large eggs Garlic Provolone cheese (soft) basil pesto tortillas I chopped the pepper and onion and cooked them up in a pan with a little olive oil. I added maybe half a teaspoon of finely chopped garlic, and sprinkle of black pepper. I let that cook down to my satisfaction, I like them to reduce and caramelize a bit. I then threw in two big tablespoons of basil pesto (store bought) and stirred thoroughly. I added 4 scrambeled eggs to the mix, and cooked untill the eggs were done. Put the stuff on some warm tortillias and put some provolone on top, added a little hot sauce to taste. Maybe its just the WOP in me, but yum! **FYI, I really like red peppers..This could also be done with 1/2 pepper.** |
