Another vote for Henkels here, Had my complete set for 20+ years. Nice balance, hold an edge, and I'll never have to buy another knife in my life.

This thing really works.
My knives are sharper than they've ever been.
Sharpening the first time takes some effort as the profile is different from what I was using before, but touch-ups hardly take any time at all.

I have the three knife set of those and a mixture of Henckels, Wosthof, and various inexpensive serrated knives. Serrated knives are disposable. Once dull, toss them. Any straight edge knife needs to be capable of being sharpened, that's why you buy quality knives.

BTW I got that three-knife Ken Onion set on sale for $250 or so a few years ago. I would not pay $500 for them no way no how!
