That's inSANE. I can't stand prime rib for example and that's why. I know the 'you're cooking all the flavor out' arguments but I don't care.

In my mid teens I ate prime rib the way people eat McDonald's fries. I had it nearly every night at work. I was a cook in a restaurant and when the Prime Rib would start to lose the pink from cooking, they'd give me the allegedly overcooked part. Sometimes I'd go home with an entire Prime Rib. It was nuts.

I looooovvvve prime rib. When I went to Las Vegas, I pretty much lived on it at the buffets. Having said that, beef, any variety, I prefer medium rare. maybe even a hint toward the medium side.

Mary used to work at Laura's Inn as a cook. Sometimes she came home with Prime Rib and other times snow crab.

We ate good with the blessings of her boss.

A LOT of my relatives were meat cutter ( premium butchers going back many generations) and you NEVER over cook beef. As far as I'm concerned, if you stick a fork in it and it does moo, it's done
