Just had a Margherita Pizza yesterday at Grimaldi's in Tampa which is the closest to real NY thin crust Pizza in the area. Very few places here in FL have a decent crust.

My favorite pizza is far from the best. As a 15 year old, I worked at a pizza joint/bar and their pizza was the greasiest, cheapest in town. Simple ingredients and it left puddles of yellow grease/oil in its wake. It was soft and thin so you had to fold it over to eat it. Amazingly unhealthy and the best eats a teenager could ask for.

They'd let me drink beer after hours too.

I can't stand onion on Pizza or in a burger but other than that, looks great.
On Sunday, I had a 5 guys burger and ordered all the way less onions.
They ended up adding onions. That ruined the burger for me.

I don't like the sting of onion.
So what you do is after slicing them is put them in a cold water bath for 10-15 minutes and it takes that away.

Make my own. Use Red Label Caputo 00 flour with a touch of Diastatic Malt Powder mixed in. I have a pizza steel which is amazing for perfectly cooked crust. Comes out great, family destroys it.

That’s how I make it as well…gotta have the 00 grade flour, buffalo milk mozzarella, san marzano tomatoes, fresh basil leaves if I want extra protein, I marinate chicken or steak in Italian herbs/balsamic vin/olive oil, grill, then rough-chop and throw it on. Not a fan of pepperoni, sausage, onions, anchovies, etc…

I taught a yeast breads class years ago in NY which was several hours long…and we would make pizzas for our lunch break while waiting for the other dough recipes to proof/rise/etc. Good times

If I’m feeling lazy, or just want someone else to make it for me for a change , I thankfully have an authentic Neapolitan place that is just 5 minutes away…they have the VPN certification as well

There was a place in Tampa that I liked a lot. I can't remember the name, but they claimed to make their dough with NYC water.

Same dough recipe I use for pizza dough is what I use for bread, but I add some semolina flour as well. Bread is amazing.
