Roasting nuts question?
Hey guys, I have been roasting my own almonds and sunflower seeds etc. for a while because the commercial ones are way too salty. I add some spices depending on my mood....garlic, cayenne pepper, etc, and a little olive oil, then toss them, before I roast them. BUT....a lot of the seasonings fall off, and I was wondering if there's a trick to making them stick to the nuts? I've tried egg white, butter, and nothing works well. Any suggestions?

How much is a little olive oil?
You need 2 to 3 tbsp per cup to get them coated enough to allow the spices to adher to the nuts well. |

Controlled diabetic, so no sugar. So far one beaten egg seems to work the best, it kinda glues the spices to the nut, and bakes it right on. I'll report when it's perfected.

Maybe try adding a little olive oil just before they are completed to hold the spices.

Try one egg white and one tablespoon of water. Mix with a whisk or a fork until foamy. Toss your nuts to coat. Mix your seasoning in a ziplock baggie. Then take your nuts out of the egg wash and toss them in your seasonings. Lightly spray a cookie sheet with oil and spread the pecans in a single layer. Bake at 250* for about 30 minutes. Give them a gentle stir with a fork about halfway thru cooking. You might want to cut back on the time for smaller nuts.
