I like the acidity it adds rather than cooking my okra in vinegar method.

I gots 5 things to add:
  1. never heard of cooking okra in vinegar...just smother it down with onions.
  2. bacon grease roux = gud
  3. sometimes I brown a hen or rooster in separate pot, use that grease to make roux.

I do something similar, I boil my chicken in water with some Tony's and use that as part of my stock.

I also add duck fat when I have some leftover, but that never lasts long once duck season is over.
