2 pounds of Filet Mignon as the meat in hamburger helper with mushrooms, and fresh steamed green beans.

Bought 7 pounds over the weekend, had steaks Sunday night, and will have the rest Thursday night, but we LOVE a nice helper with the tail end of the Filet, which doesn't make good cuts of meat.

Ground with a bit of tallow as a burger perhaps. Steak tips in a rich gravy. Even diced fine in a hash.

we do same thing with left over steaks but make Stroganoff.

McCormick pack of Stroganoff spices (follow directions), water, shrooms, sour cream, egg noodles and steak - addictive

PS - also can add some Ketchup or Fiddy Seven

Brown steak tips in butter, and onion and mushrooms...cook until onions are soft...add can of progressive cream of mushroom soup, 1 can milk...salt and pepper. Simmer 45 minutes. Stir in sour cream. Serve over noodles.

If I have any med rare rib eyes left over the next day I make steak salad. Just a regular salad with the ribeye cut into thin strips and chilled. Cover in blue cheese dressing.
