Hat's off to Yadkin
Just a quick thank you to Yadkin for giving me the idea to pour a can of beer into the corned beef boil yesterday. All agreed it was the most tender and tastiest corned beef I've ever done. I have been cooking with wine and beer and liquor for over 40 years....don't know WHY it never occurred to me to use beer in a corned beef boil, but it never did. From now on, it's the Yadkin Way for me. Thanks!

It was Baby Doll's idea. She cooks, I eat and clean.

Well, please than her. I love to cook, and have always used wine for marinating tougher meats and for gravies and braising. And beer for batter for fish and tenderizing taco meat. Just never thought to use it in a Corned Beef boil, and it made a HUGE difference in the tenderness and texture.
In going on three years here, this is the second important thing I've learned of use on this forum. The first was that Big Bob and Antfarmer 2 were the same person. |

We always pour a beer or two into the pot when we do a seafood boil or steamed crabs.

I've always focused my engineering practice on practicality. It's easy for me because I do all my maintenance and repairs, from my cars to power equipment to the yard to the house itself. This gives me the insight to make my engineering designs "construct-able". My new thread on repairing the building that the architect screwed up is an example of this. Simple bevel cuts keep water from accumulating on exposed timber members. My client, the contractor doing the work, called me today and commented on the simplicity. Those cuts will take take him only a few minutes, but will greatly extend the life of the finished product. So it's not engineers that you hate. It's engineers who don't wrench, hammer and saw. |
