I bought a lotta desert ironwood a few years ago. Oily, shrink resistant, hard as hell. That's probably what I'll use.

Making knifess is truly an art form. I never thought much of it till I was in Japan watching Chefs using there knives to work.
My daughter works in a high end Kitchen downtown Charleston. I bought her a couple Takamura MG2 and VG-10 Japanese Chef knives. Not super high end, but, Compared to the crap she had at culinary school, is night and day difference.
