Looks really good......baking powder? who would have thought?
.....although sometimes I'd rather dip my crispy wings directly into the sauce when I eat them to maintain that crispness......and you can regulate how much sauce you want on the wing. |

Very crispy when out of the oven. My wife could taste the baking powder more than I. May have added a touch too much as I was trying to make a 1.25x recipe. At any rate certainly worth trying, if you didn't know they were oven baked I doubt you'd guess. The sauce he has in the video is very meh. Dip in buffalo sauce like Kermudgeon mentions would be perfect.

Looks really good. BuckyThreadkiller and I went to watch the NLCS at a sports bar across from TCU tonight. I polished off 22 very tasty wings while watching the Dodgers tank.
In fact...all three of my teams got their asses kicked today. The Dodgers, the Razorbacks and the Horned Frogs. If I wasn't on a diet, I'd be drinking now. |

These wings are totally worth making. Give them a shot. Very simple to make, the most time-consuming part is turning them over every 15 minutes or so. One hour is perfect for a full sheet-pan. Make sure there is separation between each wing. He's got a bunch of other videos, lots of cool techniques.

I tried it as well. I give crispy-ness a 9 and overall flavor a 6-7. You can taste the baking powder. I will try it again next time with totally dry wings and less powder. I say my wings tasted a lot like the wings you get from Papa Johns.
BTW- I have a cold smoker- so my next batch I'll smoke and then go through the process. |
