Sorry I'm late.

I've never made kimchi, unfortunately. My Asian recipes are mostly centered around Japanese cuisine. Most of the recipes are given/taught to me by my MIL.

Edit: Doesn't look too bad. A little labor intensive, but pretty simple.

You can get great kimchi at Whole Foods. No need to make it yourself.

Kimchi is awesome. If you can't make it or can't buy it, just go scrape up some ripe road kill and stick it in the back of your fridge. That will give you the experience of having kimchi, without actually having it.
