My grandfather used to piss my mother off because he would make himself and I what he called a "Cannibal Sandwich"...it is as follows.....
Raw Chopped meat on Levis Jewish Rye bread (no we are not jewish)
Raw onion,salt and pepper and Limburger cheese .......

When I was in Curacao I ate Carpaccio beef sandwiches for lunch on the beach nearly everyday. Reminded me of my grandfather who used to give me Steak Tartar.

If any part of the steak dries out your mouth (the bark/sear or the inside) and requires any kind of sauce (H57, catsup, etc), you're doing it wrong.

Our method works great every time.

1. Pat dry.
2. Prep fire (charcoal preferred - gas sucks)
3. Salt/pepper on outside (both sides) just before placing on fire.
4. Once ready, steaks on direct heat for 1 min per side (perhaps a bit more if a thicker cut)
5. Once seared, move to indirect heat until steak internal temp is 145 degrees or so.

Enjoy with your favorite adult beverage and sides (wife loves mushrooms in a wine reduction, I love onions sauteed in bourbon). Along with freshly done garlic mashed potatoes and broccoli or other green (salad, etc).

In general medium-rare although for ribeyes it's OK to take them to medium, especially if they are very well marbled but have that harder fat so that it gets rendered some.
