Default Ground Bison

Had burgers tonight, and surprised the wife with ground Bison. She's a huge animal lover and never wanted to try it, but it was a hit. Bison Filet's are even better.

Only downside...3 small packages, about .7 pounds each were $30. Meh, it is what it is. Glad I don't have to worry about prices...

Been eating bison for awhile now. Mostly because it’s lower in fat and calories than beef. Also, high in Omega-3s…comparable to salmon, actually.

It’s a little pricier than regular beef but I generally only do red meat maybe once a week, so it doesn’t change my grocery bill all that much. Pricewise, it’s actually on par with grass fed/pasture raised/free range beef.



But better than that…this had me on the floor….

My best buddy started raising bison in 1973. He sold out in 2018, but still has wife's Highland beef and horses, so he's not done farming.

Buffs were a lot more work than raising beef -- needed better/stronger fencing, needed a corral and a squeeze chute in order to separate for slaughter, or to medicate, etc.

They are a tough, fast animal and can spin on a dime despite their size. He used a 7mm mag to kill them, which didn't always go as planned. He killed, butchered, processed, packaged, and froze everything right on his farm.

At any rate, once he got rid of them he told me it was a huge relief, something he didn't have to worry about any more. He has some wild stories.

But the meat is great, as good or better than any beef. The cows had some marbling and looked pretty much like beef, bulls were more lean. I've had steaks, never frozen, over charcoal and they were excellent.

Yeah, it isn't cheap; he was getting roughly double what beef prices were, but often didn't have enough on hand of some particular cuts to sell because people didn't care about the price, they just wanted it.

I think at the high point he had around 175 head, but in later years he kept them down to around 75.

Quite a few years ago, I made a chili using ground buffalo meat. I was delicious! My ex-wife (we were still married then) raved about how good it was, the best chili I had ever made, etc.

Then I told her was it was made from.

Holy crap was she ever pissed.

Ate some Buffalo burgers last time I was in Utah. Taste is not bad but it seemed dry to me. Pretty sure the high cost must be a simple supply and demand thing because beef is way better IMO.

The beef I have is very lean, almost zero fat content. Great for spaghetti and chili because there's no need to drain the pan after the meat is browned. Cooks well enough with just the moisture of the onions and peppers but for burgers the skillet needs to be prepped with a slice of bacon otherwise it's very dry and the meat can burn.

Made an entire Bison tenderloin for some of my Barn animal friends several years ago. After dinner I told them it was Bison. They were all pleasantly surprised. My only problem with the burgers is they tend to be a little dry for my taste. But still good.

I think they serve them at Ted's Montana Grill locations. I had a chance at one decades ago in CO. I've heard they are drier vs beef.

The best in my opinion and the ones that always win any competition are a blend. Michael Symon won many of the burger contest and always said the blend is what does it.

I tried these along with the dry-aged steak awhile back.
