Pretty common here to use the Zac screws. With full coverage peel & stick I would not have concern. But yes the rubber grommets eventually will fail and it’s wise to replace them after a decade or two.

Aside from you, me, and a handful of OCD individuals, no one is going to periodically replace screws. Heck, I found that few around here know to pump out their septic tanks periodically.

You are correct.
I’ve had the true standing seam full custom metal roofing. Serious custom with hand crimping along the eave metal edges. Everything pop riveted etc.

If aesthetics and budget was favorable I would have considered it.

I used snap in on my porch roof (the house, not the car ). One-inch ribs, heavier of the two gauges available from that manufacturer. The widths near the edges were adjusted to fit the roof without looking like the ribs are unevenly spaced.

The beach house I built on pilings the roofer custom sized the pans so all the standing seam ribs lined up perfectly with each other at the hips.

I had a large red iron building with "r" panel roofing with no leakage from the fasteners over 40 years. Screwed fasteners probably make all the difference vs nailed into wood.
I'm sure mine had EPDM washers, supposedly good for 50 years.

Raised rib? I've seen them with the fasteners on the high part of the rib- less chance of water intrusion past a washer. Some I've seen are in the "valley".
