No regular store around here carries pork bellies, but there is an Asian Food Market about 8 miles from here that always has them, and a lot of other interesting stuff!

It's actually very easy to do, I put the bellies on the salt on Tuesday night, and Sunday morning we are ready for the smoking. We turn the smoking and slicing into a half day of drinking and making bacon. Lots of recipes online for the curing mixture, but it is basically salt, sugar, and spices. My neighbor has a fancy smoker that we usually use, but my daughter and I smoked it right on my Weber kettle once, and it did just fine. Have fun!

Went with the tallow instead. Not bad for two bucks.

That is the best stuff for making French fries. McDonald's used to use beef tallow to fry their fries, but green weenies convinced them to go with vegetable oil.

Just leave out stuff you don't like and use what you have the last batch I didn't have celery onhand but did have peas and fire roasted corn. The corn (on cob) is seared on a charcoal grill to get some good color and then left on the top rack to roast for a while...I cut it off the cob and freeze it in bags in the off-season so that I can add to salads, soups, etc. Adds a nice sweet, smoky flavor to everything.

Come to think of it, I actually liked that batch better

There is only one applicable jello recipe. Boil water, stir in jello. mix and add cold vodka in lieu of cold water. freeze jello shots because with that much vodka refrigerating them wont work. enjoy bubble gum consistency jello shots at your leisure.

I use Everclear. Less but stronger alcohol, better setting up, same bang.
