People wo order steak well done are the same people who mix single malt Scotch with Mountain Dew. Zero taste. They need to stick to hamburger.

I pan fried a ribeye last night and have half of it leftover for tonight. 14 ounce cut, about an inch and a quarter thick, took 4 minutes per side.

I use a 90+ year old Axford Broiler 11" cast iron skillet with the raised ribs on the bottom and get it smoking hot on a gas burner before I toss the meat on.
Perfectly rare/medium rare results every time.

Medium rare is where it's at, steak wise. That's the only acceptable answer. If it accidentally comes out a little closer to traditional medium, that's OK, things happen. Intentionally well done? Gotta nope right on out of that.
